Meet the Chef

Nikolas Carlsen


For Head Chef Nikolas Carlsen, food is all about having the courage to be unique.


Alongside Moon, Nikolas is also the co-owner and Head Chef of Amateur, which opened in September 2025 and has quickly made its mark on Bergen’s restaurant scene.


His passion for unexpected pairings began at just five years old in Italy, when he tried strawberries with balsamic vinegar for the very first time—a combination that sounded completely wrong on paper, but tasted extraordinary.


That single moment left a lasting impression and has shaped his approach to cooking ever since.


His philosophy for Moon by Amateur is about taking world-class cuisine and top-tier ingredients and serving them in a relaxed, down-to-earth atmosphere—what he calls “rough dining.”


His menus feature raw ingredients, unexpected combinations and flavour profiles you won’t find anywhere else, whether in New York, Copenhagen, or right here in Bergen.


The goal is simple: to surprise, challenge and ultimately delight—with combinations that make you see familiar ingredients in a completely new way.

The Story of

 MOON


Moon was founded in 2021 by French twin brothers Jules and Nicolas Selukov, who brought their passion for French fine dining, wine and hospitality to Bergen.


They created an intimate restaurant centred around French culinary traditions and exceptional Norwegian ingredients, quickly establishing Moon as a distinctive part of Bergen’s dining scene. 


Throughout their time at Moon, the restaurant was consistently recognised by the Michelin Guide, reflecting the quality and ambition they brought to the restaurant.


In May 2026, Jules and Nicolas moved on to new projects, marking the beginning of a new chapter for Moon.  Today, the restaurant is known as Moon by Amateur, bringing together the legacy of Moon with a new culinary direction.
